This regex captures item names from structured text containing pricing information. It looks for a non-word character followed by whitespace, then captures the item name (in the named group 'Item') non-greedily until it encounters 'Price:'. This is useful for parsing invoices, receipts, or product listings where item names are followed by their corresponding prices.
